Five Longhorns to watch vs. Florida

Florida (4-2, 2-2 SEC) is set to travel to Austin, Texas, to take on the No. 7 Longhorns (4-1, 1-1 SEC) at 12 p.m. ET.

As Gator Country’s own David Wunderlich put it, the ‘Horns are far from bulletproof. But they are one of the most talented teams in the country. Texas could easily have a handful of first-round picks, with four different players projected inside the top 10 of the 2027 NFL Draft across various mock drafts.

As part of our weekly scouting report, Gator Country highlights five Longhorns to watch.

Edge Colin Simmons #1

Colin Simmons is arguably the best pass rusher and defensive player in college football, leading the country with 9.5 sacks in just five games. He’s coming off a 5.5-sack performance against Tennessee and a two-sack game last week against Oklahoma.

The 6-foot-3, 246-pound edge rusher has elite bend and a quick first step off the line of scrimmage. Florida had real issues defending Dylan Stewart last week, and this week won’t be any easier. Simmons is the top player to watch in this matchup.

QB Arch Manning #16

The Texas offense has been average this season, and much of that stems from the inconsistent play of quarterback Arch Manning. When he’s on, he’s as good as anybody, but his performance can fluctuate from snap to snap. Last week’s game against Oklahoma was a perfect example. Manning threw a costly interception late in the game but responded with an NFL-like drive to lead a quick touchdown.

Manning has thrown for 10 touchdowns and five interceptions this season and has committed a turnover in all but one game.

Texas should utilize Manning more in the running game, where his elite athleticism makes him especially dangerous right now. He’s got an NFL arm and can make every throw, so Florida will likely see some of that on Saturday. Manning’s upside is why some view him as a potential top pick in the NFL Draft. However, he’ll likely miss a few easy throws, too.

WR Cam Coleman #8

Junior receiver Cam Coleman is one of the more highly regarded receivers in the 2027 NFL Draft class, but his production has been somewhat limited by Texas’ inconsistent offense. Still, the 6-foot-3, 204-pound receiver has recorded 17 receptions for 318 yards and five touchdowns in five games.

Coleman has above-average speed that threatens the top of opposing defenses. He’s a reliable deep-ball target and has excelled at making contested catches throughout his career. He’s been targeted 11 times on passes traveling 20 or more yards downfield and 12 times on passes between 10 and 20 yards. He’s been targeted just seven times on passes traveling fewer than 10 yards, giving you a good indication of where Texas looks to utilize him most.

Texas lines up Coleman both out wide and in the slot, though he primarily serves as an outside receiver. Manning also will look to force passes to Coleman, making their connection something to watch on Saturday.

LB Rasheem Biles #3

Rasheem Biles has been around the football all season for Texas, leading the Longhorns with 41 tackles and two interceptions. While he primarily plays inside linebacker, Biles also lines up outside the tackle and blitzes the quarterback. He’s recorded six pressures and a sack this season.

At 6-foot-1, 222 pounds, Biles is undersized for the position but has been productive throughout his career. Before transferring to Texas, he led the ACC with 17 tackles for loss at Pitt in 2025. He’s gifted in coverage and plays downhill with aggression against the run.

OT Trevor Goosby #74

Texas left tackle Trevor Goosby is one of the top tackle prospects in the 2027 NFL Draft class, if not the best. Standing at a remarkable 6-foot-7, 325 pounds, Goosby earned a spot on Bruce Feldman’s annual Freaks List before the season. He’s an incredible athlete for his size and excels in both run and pass blocking.

Goosby has yet to allow a sack in 2026 and has surrendered just three in his entire four-year career, despite facing some elite pass rushers throughout his time at Texas.

Offensive linemen don’t typically make my list of players to watch, but someone of Goosby’s caliber is a must-watch player.
