    Get a decent chef's knife. It is THE most important weapon in your cooking arsenal.

    You don't need to get really spendie here. I have a "back up" chef's knife that is very decent: Victornox Fibrox 8". My main chef's knife is a nearly 40 year old Henckel's 3-Star. It is very old school with three rivets and a laminated wooden handle. I love the balance of that knife. They no longer make it.

    Global knives used to be a good deal, but Anthony Bourdain recommended them and now they cost like many of the big names.

    I have two so that I can use one on the meat and the other on the veggies. I don't want to have to sanitize in the middle of chopping.

    How's the weather up there today, Bill? Hope you are doing OK.

    Just finished watching today's TDF stage. Love that this was the second time a rider won a stage - after finishing in 2nd place in an earlier stage.

    Once you get set up in Jacksonville I would suggest a trip to a Bed-Bath-&-Beyond. They are going to have one of the larger inventories to choose your kitchenware from with employees that are quite knowledgeable.

    I would encourage you to purchase pots and pans with thicker bottoms to them as they will not scorch food as quickly as thin bottomed pots will.

    I completely agree with @GatorLurker about knives.

    We are taking the day off in the kitchen as Ms. Jan is pizza hungry.

    A lot of rain, a little wind and looks like 2-3 more days of steady to heavy rains as Sally makes her run through the south—looks like they expect a turn to the NE once it gets on land basically swinging towards Atlanta.

    Ahh, the sounds of rain on the tin roof of our back porch with an ice cold longneck or 3 in hand.

    Just a note about the carrot bisque. Several years ago I had a carrot bisque at the Island Hotel in Cedar Key and it was great. My youngest son really liked it. I spent some time really tasting it and was able to replicate it.

    It is really good.

    Well, we woke up this morning to the news that Sally began an early turn East so the dirty side of the storm is pretty much hammering Pensacola to Panama City.

    We are getting a ton of ran. 8” in the rain gauge and it’s over flowing but neither one of us is inclined to walk out in the downpour just to empty it.

    So far so good—no loss of power at this point. Best of luck to all that are being effected.

    With the weather in play we will definitely have an inside supper this evening.

    Today we are having Ms. Jan’s Mexican Chicken Enchilada Casserole and refried beans topped with Tex-Mex cheese.

    We will have back porch adult libations this evening listening to the rain on the tin roof and watching the lake working itself through the back yard.

    Down here they’re saying (TWC) that y’all should expect 4”—6” throughout the weekend.

    Making nearly conventional tacos tonight. I did make my tomatillo/avocado salsa to put on them.

    Tomorrow is chicken tagine.

    Well, with all the rain and cloud cover the humidity has actually lessened and the temps have dropped off some.

    Tonight we are going to have my homemade chili served over white rice and covered with shredded sharp cheddar cheese.

    Ice cold longnecks and chilled wine will be on tap for our afternoon/evening refreshments.

    It's funny you should write this, Bill....because when I walked outside this morning for the first time in many months it felt a bit cool with less humidity and I asked myself......is fall on the way now?

    Love the chili over rice combo, too! Have you ever had chili over angel hair pasta? With the shredded cheddar cheese on top -or- parmigiana cheese....yum!

    Watched a very enjoyable TDF stage today. I've said it before and will say it again.....you never know what to expect on any day on the tour. The 1-2 finish of the Ineos riders was simply fantastic! Especially given the work Kwiatkowski put in both today and in previous years with other teams in a support role. NICE to see the man get the win - especially this one and the way he won. Credit also to his teammate Carpaz, who will now wear the polka dot jersey. I hope it brought some joy to Bergal, given his departure from the event.

    Even in Gainesville we had two rain bands from the remnants of Sally come through. The first was very intense.

    Ineos, formerly know as Sky, finally had a good day. Well done. But I think that Carapaz is not a strong enough TT guy to keep the polka dots after Saturday.

    Roglic and Jumbo Visma did what they had to do. Wout should get congrats from the whole team tonight to keep 4 seconds for his team leader with a really gutty effort. Too bad, because that hurt in his legs might keep him from contending tomorrow if it comes to a bunch sprint.

    Unless there are big crosswinds tomorrow will be a yawner. Green Jersey is sown up and no GC or KOM implications. It will all be all about a stage win for some team. I expect a break with some of the teams without a stage win to go off the front early with maybe with two or more riders. And maybe the break will stick because the strong teams have no interest.

    Going to start the chicken tagine soon.

    Kayla, Tim, and Magnolia Grace came in yesterday for our first visit since June.

    Their request for this evening’s meal is fried catfish, so there ya go.

    Tonight we are having fried catfish, cheese grits, homemade coleslaw, sweet pickles, and hush puppies.

    Everybody knows you drink col’beers when you’re frying fish, right?:cool:

    Tonight I was expecting to make chicken breasts Provencal but because we took a look at the new Florida ball park we are getting BBQ take out and that is OK.

    I will make the chicken breasts Provencal on Sunday.

    Tomorrow I will smoke a pork shoulder for pulled pork. Of course I will make Carolina slaw and I have started soaking beans for baked beans.
