    Escarole soup tonight. Last night was pork chops with a warm slaw and scalloped potatoes with fennel. I used the leftover chops for.the soup.

    Reglazed two 6 light over six light double hung windows today and did a second enamel coat on the interior of three double hung windows. I am getting very efficient doing this.

    A couple days ago I made lunch for the wife on her birthday.

    Grilled a steak. She likes sirloin because it doesn’t have the fat of a ribeye (don’t get me started... her taste in men sucks and her choice of beef is weak but she is terrific). So I grilled a Wagyu sirloin. 3 minutes on each side. Brilliant steak.

    Also sautéed some green beans. Olive oil and garlic. Usually we boil them and add the sauce. This time we just sautéed. Better! Highly recommend.

    I also made a triple chocolate cake (yes from the box, screw you all). This time it didn’t collapse (long story but going forward, I know to test the middle). Tasted delicious.

    And we have been on a shrimp taco kick. Loving it. Sautéed in a frying pan. Add some pico and bacon. Genius. We make it a bit wet with some buffalo wing sauce. Mango habanero from HEB in Houston if you want specifics.

    Smoked two ducks today with a tupelo honey and soy sauce glaze. Also made scalloped potatoes with fennel and a sundried tomato and pistachio nut tapenade.

    My wife is making something as well with French green lentils.

    Kind of fancy for a Friday, but we are celebrating a friend's birthday.

    Today I’ll be re-acquainting myself with the Big Green Egg. I’ve got a 10 lb. shank portion ham I’ll be smoking over applewood smoke and apple juice.

    Sides will be Ms. Jan’s homemade tater Salad, deviled eggs, and fresh cream 40’s & butter beans topped off with fresh okra.

    Life is good in Gator Nation!

    10 lbs is an all day smoke.

    Today I am smoking St Louis cut ribs after cutting tile for half of a 170 square foot job and thin setting half of it. Tomorrow I will cut the rest and set as much as I can. Got to get this done ASAP as we are renting soon to a family with a two year old undergoing chemo that needs a place in town with easy access to Shands.

    Finished grouting the tile job yesterday. I had to make seven custom thresholds as well so my planar, router table and table saw also got a workout.

    Little odds and ends jobs today getting the house ready.

    So not much cooking from me lately. Maybe I will do some cooking tomorrow.

    Made some bacon wrapped venison backstrap over the weekend with sausage and homemade waffle fries. Put the backstrap medallions on slider buns with melted pepper jack. Was good to fire the Egg up again after traveling for work most of January. Hope everyone is doing good.
