    Did you smoke it the day before or wake up the birds on Christmas morning to get it done in time?

    Are you still using the regular sized Big Green Egg? I think it is about the same size as my Kamado Joe Classic and a 14 lb bird is about as big as I can go.

    Or did you use a more conventional smoker on the turkey?

    Funny you say that. Only folks from the north call it Hoppin John from my experience. I live in upstate NY and when I try to explain it, it’s …”Oh yeah. Hoppin John” …but most have never had it.

    Up North they would call this Soul Food.

    Down South it is just regular folks food.

    Up North most white folks never had collard greens.

    Down South everybody loves collard greens. And turnip greens. And mustard greens.

    Up North they have Swiss chard.

    Actually I gave my BGE to one of my good friend/hunting buddy in Marianna before dealing with moving a 400-450 lb smoker up to Georgia. I went back to my old cylinder smoker. The first one I had was the old Cajun Cooker smoker, but they are no longer in business. My current smoker is the Weber Mountain Smoker that is made identical to the old Cajun Cooker.

    My smoking formula on it for both whole ham and whole turkey works out to 20 minutes per pound. I usually try to get the same weight size on both to simplify my cooking time coming out right.

    It’s a two rack smoker, I put the ham on the bottom rack and the turkey on the top rack.

    That said I prep the smoker the evening before, get up at 5AM-
    light the charcoal and the meats are on at 5:30AM. They are usually ready 12:30P-1:00P. I let them rest, carve them at 2PM and we are sitting down to eat about 3PM.

    Still have to get up really early but the smoker gets up to temp a lot quicker than a ceramic. But on the down side it probably needs more "baby sitting" to keep the temps in range so can't go back to sleep.

    I don’t know. My wife was born in Georgia, lived in New Orleans for a while as a kid, and lived in Charleston through HS and college, and she calls it Hoppin John.

    Prepared London Broil. Quick lesson, london broil is a cooking method not a cut of meat. Usually a flank cut of meat, it needs marinated to insure tendernos and then broiled on high heat for 5-6 minutes on each side. Use the right marinade and it's great

    I have to check the water bowl once during the cook. I have an outside temperature gauge that I monitor-at most I will stoke the fire once.

    Going to fire up the KJ for thick center cut and bone in pork loin chops in about an hour.

    Left over hot and sour soup as an app and a salad.

    Not that it is big enough for a ham/picnic and a turkey.

    Change of plans for the pork chops. It is now POURING rain in Hogtown and it looks like it will be like that for a long time. Pork chops on cast iron works but doesn't get the smoke from hardwood lump charcoal.

    He does—he has the XL Big Green Egg. It is bigger around than the original BGE but not as deep. You can do a 12-13 lb bird and a shank portion ham on it at the same time but that’s the most.

    Tonight we are having fried cubed pork steaks with leftover black eyed peas and turnips. There will be fried cornbread on the side.

    It was extremely foggy here til about 11AM. Sunny after that with a high of 52*.

    Ice cold longnecks and chilled wine will do this evening.

    Had to have a root canal done today so we’re going to pick up Oriental from Ably’s Chinese and Thai this evening.

    I feel like I will choose a tumbler of Maker’s Mark at this point-Ms. Jan will have her chilled wine.

    I've had one root canal back in the day when oxy was prescribed for pain. When I was getting the procedure done I could hear the receptionist getting call after call from people complaining about tooth pain and needing a refill. I got a prescription for oxy and wasn't going to fill it for ten pills but my endodontist said I should fill it just in case.

    I flushed every one of those pills.

    Too bad you can't get a prescription for Maker's Mark. LOL.

    Last night was pork tenderloin and Chinese greens from a friend's garden with rice. Tonight I am making clam linguini.

    Tonight Ms. Jan is making her homemade chicken pot pie. So tasty and good during this time will be my choice for the evening.

    Cracked open a Christmas present this evening. A tumbler of Knob Creek 9 yr old 100* this evening, Ms. Jan will have her chilled wine.

    That is my go to bourbon. It makes fantastic cocktails and is good enough for sipping by itself. I don't enjoy bourbon enough to spring for some Pappy. But if somebody offers me some ...

    After an afternoon of fixing things at our last rental house it will be a super simple meal: Tex Mex tacos.

    First I had to fix a door. It is an old house and has mortise locks and a door knob fell off. No big deal. Happens all the time. Then they said that there was a leak under the kitchen sink. For some unknown reason a slip joint washer was missing from one of the joints on the tee. I have no idea how that could happen because my tenants are not tool using mammals and they would never take the plumbing apart and gotten rid of the washer. Maybe they had a friend try and fix it and screwed it up. IDK. Last time my tenants tried to fix a kitchen leak on their own it was a full can of Flex Seal making a total mess of everything. I had to tear everything out and fix it right. I think they knew that they screwed it up and tried to make it right on their own. Needless to say none of those tenants were engineering students or mechanics.

    But I got everything fixed.

    Felt bad for my dog that missed me most of the day.

    I mostly bounce back and forth between Knob Creek 9 yr old and Maker’s Mark. I’ve Pappy’s once-now I can say I’ve had it.
    I know it’s top shelf in the bourbons world but $1,200/bottle is outside of my enjoyment price range. (And I have seen it in some bottles @ $3,000).
