Outside the dugout: What's cooking?

    Interesting on the tenderloin. My wife and I were just discussing Christmas dinner and we were leaning in that direction. But it will just be the 2 of us and decided maybe not worth the heavy investment. Still up in the air at this point.

    Tonight, roasting a pork loin marinated with herbs & garlic. Baked potato and steam broccoli on the side. Wait for it ……wife having a salad. Though I’m sure she’ll pick at my plate.

    You can buy two filets mignons or a chateaubriand if only for two.

    I like leftover pork tenderloin to make escarole soup.

    Tonight we’re having black beans and rice with smoked beef sausage. It will be accompanied by fried cornbread.

    A tumbler of Maker’s Mark works well for me today. Ms. Jan will stick with her chilled wine.

    Last night was chicken enchiladas for the carnivores and sweet potato enchiladas for the veggies. Mexican skillet corn for everybody.

    Tonight we are getting Square House pizza as the next two days will be intense cooking. We need the rest.

    Tomorrow we will have fish (cod) tacos for most of us for lunch and Cornish pasty for dinner.

    Yesterday I slow cooked the middle part (3.5+ pounds) of a trimmed beef tenderloin. Next time I will buy the whole thing and save the trimmings and ends for other meals. Finished the tenderloin in my huge cast iron Dutch oven because everything else I had was too small. Brown butter, soy sauce, Worchester sauce and sugar as a glazing liquid during the sear. Horseradish sauce of course.

    Made a huge batch of mashed Yukon golds and roasted brussels sprouts. Lots of other sides as well.

    Well our guests really like cocktails so I had to buy some more 9 year old Knob Creek bourbon and Bulleit rye today. I am more of a clear liquor cocktail person (martini, aviation, margarita, Negroni, Last Word, White Russian). I do fancy a Manhattan (rye) or Boulevandier (think Negoni with rye instead of gin) on occasion. Maybe a sazerac if not in a hurry.

    I really got behind the last couple of days. Christmas we were able to duplicate getting all the family together early afternoon.
    We had our traditional meal of smoked turkey and ham with all the trimmings everyone looks forward to. The grandkids ruled the day!

    Yesterday was Ms. Jan’s birthday-she celebrated 39 again but honestly she wears 72 quite well.

    We had baked lasagna with Caesar salad and garlic bread sticks. The ladies had a Joel Gott red Cav and the fellas had tumblers of bourbon.

    Life is good in Gator Nation!

    For Christmas dinner, it was just the 2 of us, we had pan seared filets, roasted Brussel sprouts & butternut squash and what my wife calls “fat ass” potatoes. Sliced potatoes roasted in the oven then served with a drizzle of vinaigrette, Gorgonzola crumbles and watercress. Very tasty but obviously not healthy, so we don’t make it often. Then leftovers last night between that and the finger food from Christmas Eve.

    Today is my grandson’s 2nd birthday (poor kid) so family & friends will be celebrating at a little tykes gym in Albany. I believe they’ll have pizza and wings & things. Which is fine by me. The kitchen will catch a break for at least one more day.

    @scooterp— your descriptive of “very tasty but obviously not healthy” makes me smile and remember my Dad when he returned home from his first post op visit with his heart doctor after his open heart surgery—my Dad’s explanation of his new diet his doctor wanted him on was “if it tastes good-spit it out”…

    And for sure and certain-tonight is going to be Christmas Day leftovers, round 1.

    We have had sunshine and a high of 71* the last two days. One more day of this and then Monday begins the next winter plunge. By Monday night we’ll be looking at 13* with single digit windchills.

    Looking forward to a tumbler of Maker’s Mark this evening. Ms. Jan will stick with her chilled wine.

    I'm with ya on Maker's as icing on a great dinner,..if you like that wheated taste as you and I do ask your beverage provider if they've got any Weller's, another smooth one. Have a Happy New Year 74nole. Got to spend time with Bryan over the holidays,..these boys are now men,..all growed up! And yes,..life is good!

    Escarole soup tonight with some leftover pork tenderloin. Simple and always a crowd pleaser.

    Not much of a bourbon drinker here. I use bourbon as a cocktail component so I don't buy any super high end stuff. I find 9 year old Knob Creek is decent as a sipping bourbon and more than good enough as a cocktail bourbon so that is what I usually buy. Kind of a sweet spot for me.

    Same thing with me and tequila. My "go to" tequila is Espolon blanco. Decent enough sipping tequila and more than good enough for margaritas. But I will sometimes get a bottle of Don Julio blanco for sipping or making special day margaritas. Just a little bit better than Espolon in a margarita but kind of a waste to use it for that. Not a fan of Patron at its price point. It is not bad but I think over hyped and priced. I have had some super tequilas and loved them but not in my everyday price range.

    No surprise here tonight—it’s leftovers to make room in the fridge so we can go to the grocery store.

    We had our high at 7AM this morning of 50*- it’s been dropping all day, currently it’s 32* and predicted to drop to 19*-21* tonight. Overnight it’ll drop into the teens by daylight with single digit windchill.

    That said we will pick up the ingredients for white chicken chili and taco bean soup on our trip to the grocery store. This cold front is supposed to be around for 10+ days.

    I will enjoy a tumbler of Maker’s Mark this evening, Ms. Jan is having a Moscow mule.

    The weather is doing it’s part of upholding the cold front so we’re going to do our best to keep up—it’s white chicken chili tonight topped with Sargento Tex-Mex shredded cheese accompanied by Tostitos multi-grain scoops.

    Cold weather does wonders to influence the choice of a tumbler of Maker’s Mark….(so glad it does)! Ms. Jan chooses herself a Moscow mule.

    Happy New Year to one and all!

    Our New Year’s Day meal will be sliced smoked ham, fried chicken, black eyed peas with onions, turnip greens, sweet potato soufflé, and fried cornbread.

    Ice cold longnecks and chilled wine are the choices of the day.

    We are gathering at Kayla & John Luke’s as a family.

    A day late on the hot and sour soup so making it tonight. Yesterday was a bunch of unintended leftovers. Long story.

    But we did have black-eyed peas for good luck. No greens, though. I guess we have enough money.
