    A little different. You need a really high smoke point oil to get it really hot and we had some grapeseed oil. Getting that to smoke point was REALLY hot.

    Tonight it’ll be smoked beef sausage with red beans and rice.
    Our side is fried cornbread.

    The longnecks are ice cold and the wine is chilled.

    I agree but Ms. Jan doesn’t care for andouille so…..

    Actually she will go along with andouille if it’s for a larger group for a crawfish boil, but if it’s just us she prefers smoked beef or pork sausage.

    It's weird, there were a dozen brands of sausage I liked in TX. Haven't found one I liked since moving back home to FL. Publix has holmes which was one I liked, but they only have it sliced into quarter sized pieces. I like to do grilled links sometimes. Kountry Boys was one of my favorites. Also liked an earl campbells hot link (not the red ones) occasionally and haven't found anything comparable to that here either.

    Tonight’s supper choice is a direct result of our weather today. We started out this morning with a cool 56*. Our high today has been 76*.

    Tonight we are having a pot of Taco Bean soup that has been smelling up the house all afternoon.

    The longnecks are ice cold and the wine is chilled for the afternoon/evening.

    The grocery store sausages I can get in Gainesville are OK but not great. For example Johnsonville brats are OK but nowhere near as good as the brats you can get in Milwaukee at local butcher shops.

    Now Fehrenbacher's is local and in the 4th Avenue Food Court not very far from where I live and is world class for some of their sausages. They have gone viral after being on Diners, Drive-Ins and Dives. But no brats.

    Johnsonville is available everywhere. Not a huge fan of brats. I don't really know what you'd call what I like, but I call it country sausage. Similar here would be like nettles "grandpas old time" maybe, but I don't care for it. There's a realtree brand that kind of looks like what I like, but I don't like it either. I will check out the place on 4th if I'm ever over there.

    Tonight is chili dogs probably eaten on the sofa watching Lady Gator volleyball versus UNC. Using Hebrew National hot dogs and not going into my dwindling stash of Vienna Beef hot dogs in the freezer. Both are very good dogs bit I like Vienna Beef dogs a little more as they are the classic Chicago dog.

    Chili was made to my wife's specification: Wick Fowler's using 1/2 the cayenne and with chili (spiced) pinto beans and ground turkey. I think Wick Fowler's is fine as a spice mix out of a box, I'd rather use game meat like venison if available, and even though I did not grow up in Texas I think that they are correct that beans do not belong in chili. I suspect that adding beans to chili was a Depression Era thing to stretch the recipe.

    My wife grew up in Cincinnati with Skyline chili. Sigh.

    I think I know what you are talking about and I don't think that you would find it at Fehrenbacher's. Something like Jimmy Dean's only a lot better?

    I’ve never had a jimmy dean sausage like what I’m talking about.

    This was one of my favorites, but even the store brand stuff at kroger was sufficient. Also like holmes, and a slough of other brands. We have some stuff that looks similar here, but nothing I like.

    First batch of chili for the season. Made a smaller amount, since we will be out of town for the next 2 weeks to go to my son’s wedding in Fla. standard as always beef, onions, jalapeños, fire roasted maters with a pinch of sweet & smoke. Outstanding.

    After my first bowl, I asked myself why can’t I do this all year long.

    Tonight we’re taking tortillas and using leftover taco bean soup drained and making burritos for supper.

    Ice cold longnecks and chilled wine are in order.

    Thai red coconut milk curry with chicken and veggies (carrots, yellow bell pepper, water chestnuts, and shiitake mushrooms) seasoned with kaffir lime leaves. Served over Texmati rice. Smashed cucumber salad with serrano peppers, garlic, rice wine vinegar, fish sauce, sugar and chopped peanuts as a side.

    Thin pork chops with black mission figs in a balsamic, cream and shallot sauce. Wide eggs noodles to soak up the extra sauce.

    Always a treat when figs come into season. I miss having a fig tree in my yard. One really cold winter killed it.

    Stir fried Asian veggies with a few shrimp. The shrimp has been marinading in soy sauce, oyster sauce, garlic and ginger for a couple of hours.
