    Between my foot surgery and Kayla birthing their son all this week has been more picking up food than cooking. Hopefully things will get back to normal soon.

    The pork shoulder last night was very strange. It was 3.7 pounds and after more than 8 hours on the KJ at 250 F it still was only up to 190 F. And the meat was very dry.

    So the pork was more like torn and chopped rather than pulled and it needed to be sauced.

    I have had some stubborn pork shoulders before but never like this.

    It was edible but not nearly as good as normal. I think it was just a piece of meat that was low in fat.

    We are having lasagna (compliments of Alan) with a fresh Caesar salad and garlic bread.

    Ice cold longnecks and chilled wine are our choices this evening.

    Mrs. Candy made some chicken and rice, field peas, okra and biscuits with some honey on them.

    I like it stewed, fried, cooked into peas, and stewed with tomatoes over rice. I don’t eat it pickled too often though.

    Last night my wife and I stayed out at Cedar Key. We had dinner and stayed at the Island Hotel.

    Dock Street is still a HGE mess after Helene. Some places we have stayed out there in the past are waiting to be rebuilt. Some are GONE.

    We just wanted to go out there and throw some money at the town.

    On our way back we bought some seafood: Gulf shrimp, locally grown clams and almost 2.5 pounds of grouper filets. Going to use some of the shrimp to make pasta with sun-dried tomatoes, roasted red peppers, cream, garlic, basil and red pepper flakes for dinner tonight. The grouper menu is up in the air. We might make the best fish tacos ever with some friends and their kids or make one night of fish tacos for us and another night of grouper with a macadamia nut crust.

    For sure we are making Thai clams one night. If I have time I will make clams Casino with the rest of them. Or an authentic clam linguini with clams in the shell.

    We are going to have Ms. Jan’s chicken pot pie for supper tonight. Fresh yeast rolls will also be available.

    Very pleasant day here today—it was 60* at daylight, 65* by 11:30am, and a high today of 73*.

    Ice cold longnecks and chilled wine are available today.

    Tonight I’m grilling bone-in center cut pork chops. Our sides will be steamed fresh broccoli with AuGratin potatoes.

    We will enjoy Moscow mules and Kentucky mules this evening.

    Tonight we are finishing off the grouper we bought near Cedar Key with a macadamia nut crust, cilantro and lime rice, and sauteed green beans with sesame seeds.

    MIL is flying in for the weekend, so Bolognese is on the menu, and simmering right now.
