    I use Rick Bayless's original book. Totally agree on Oaxaca having the best.

    Going to the wine cellar (I built one in a large first floor closet with a refrigeration unit designed to keep the air moist. I holds about 180 bottles) to pick out a single vineyard Rochioli pinot noir to pair with dinner. Or maybe a Rhys.
