    Tonight we’ll be having Mongolian Beef stir fry with mixed vegetables and fried rice.

    Ice cold longnecks and chilled wine are our choices for the evening.

    I have the main part of the salad ready, the dressing with red onions ready and the squid sitting in olive oil, lemon juice and red wine vinegar on the side.

    For best results the salad part and the dressing part should be mixed together about 15 minutes before serving. Squid being on the side is because my wife is not a huge fan of squid.

    Tonight our children are taking us out to help us celebrate our 50th Anniversary! So proud that they want to do this!

    The place is a surprise but we’re pretty sure it’s Alan & Abbey’s and Kayla & John Luke’s favorite place up here for special occasions.

    Tonight we’re having chicken lo mein with steamed green cabbage and asparagus.

    I’ve got a bottle of 10 year old Henry McKenna 100 proof I’ll pour a tumbler of this evening. Ms. Jan’s requested Moscow Mules.

    Raining all day …and the temp has dropped considerably, after a week of uncharacteristic 90+ degree heat, here in the Adirondacks.

    I’m making our first pot of chili since March. The traditional kind. Picked up some premium coarse/chili grind, beef/pork from the butcher yesterday. Looking forward to eating tonight but half the enjoyment is making it.

    Go Gators. Nice win last night. We needed a clean game.

    Last night was asparagus risotto. My wife is expert at making that. A lot of work with almost constant stirring to get it right. It was right. Sometimes we grind up the asparagus so it is almost an infusion but not this time.

    Tonight I was tasked with making a chopped salad and to do something with a large number of jalapeno chiles. We needed one pepper and my wife went somewhere were all they had were packages with lots of them so we had a huge number to deal with. And when I need a green hot pepper I usually opt for serranos because the heat though typically hotter is very consistent. Jalapenos can vary from almost mild to very hot and more difficult to get the balance of heat and flavor. Yes, peppers are used for flavor as well as heat.

    Making jalapeno poppers. I know that there are a million variations on them but I am not deep frying them and I am not a big fan of them bacon wrapped. I am stuffing them with a mix of cream cheese and sharp cheddar cheese with some scallions. Panko sprinkled on the top for some crunch and then into a hot oven.

    Kind of wish Jason Mendoza was coming to dinner.

    Dos Equis Lager on tap for me and Ms. Jan’s sure to go with Margaritas.

    Tonight it’s leftover chicken’n’rice with grilled cheese sandwiches.

    I’ll enjoy a couple of tumblers of Elijah Craig tonight and Ms. Jan will stick with her chilled wine.

    And being garbage day a good day to throw out shrimp shells.

    Just us— but if you have something like shrimp shells, chicken trimmings, etc that smells up the garbage can—we put it in the appropriate size ziplock bag in the freezer until garbage day. Works great for us.
