Same use that Ukraine's farmland and minerals is to Russia. When you have an abundance of things that other countries need, that gives your country power over them. Taking Ukraine would allow Russia have control over every starving country in the world. Need votes in the U.N.? Threaten to cut off a nation's food supply and see how fast they agree to give you their vote. Need to weaken the U.S.? Make the U.S. pay more for rare earth minerals. Do you even know what a monopoly is? (Not the board game.) Russia does not necessarily need a monopoly, if they can forge an alliance with like-minded (marauding barbarian) countries like China and force the U.S. to pay their prices for things like RE metals. Russia always wants to have things to hold over other countries so they can get what they want.
