Outside the dugout: What's cooking?

    Grilling chicken thighs LIGHTLY seasoned with Nashville Hot Chicken rub. Also grilling corn on the cob. Macaroni salad as a second side.

    Grilling the corn with the husk off to get some char on it. Also good to grill with the husk on if you soak it first so the husk doesn't catch fire.

    Last night I made pork chops ala a recipe from Umbria in Italy. Very slowly pan fried with a pepperoncini and caper sauce with lemon slices. Spaghetti as a side along with caprese salad. Pretty good but I will need to tweak the cooking a tad from the Epicurious recipe. I thought correctly that the pork chops were getting over cooked before the sauce became a tasty syrup.

    Next time I sill saute rapini as a side instead of spaghetti. The bitterness would pair well with the richness of the pan sauce.

    Tonight is Thai red curry with chicken and lots of veggies. Glad that I have a kafir lime tree for leaves for flavoring.

    Tonight is a chopped salad.

    I do add some ham steak and swiss cheese.

    Tonight we’re having fried cubed pork steaks, fresh broccoli, and AuGratin potatoes.

    Summertime ice cold longnecks and chilled wine are in order.

    Tonight I’m grilling cheeseburgers. We will have BBQ baked beans and homemade coleslaw for our sides.

    Of course ice cold longnecks and chilled wine will be available as desired.

    We have friends on travel and we are watching their pool. I started their bottom cleaning "buggy" a few hours ago and soon we will go there to swim, eat take out, and drink wine.
