Outside the dugout: What's cooking?

    Tonight I grilled chicken thighs with The Spice Lab Nashville Hot Chicken spice rub. I took it easy on the rub and it was perfect for a mild to medium Nashville hot chicken. Not the real deal but not bad.

    Boiled some corn on the cob as the side.

    Speaking of corn on the cob on the grill I do that when I make my corn and avocado soup. It is important to put a bit of char on the corn. I also use the cobs for making the broth with the kernels, onion, garlic and salt.

    It is a cold soup and I make cilantro oil to drizzle on the soup just before serving. It is A LOT of work so only for special occasions like Thursday. LOL.

    I have some pork tenderloin that I need to use so I am making escarole soup tonight.

    Tonight is both a chicken tinga and a shrimp tinga for tacos. I made pickled red onion this morning and a tomatillo/avocado salsa just now. Also will have cabbage, avocado and radish as toppings. I will ask if anybody wants some dried epazote and if they do I will dig it out and use some myself. My niece that is mostly vegan does eat some seafood hence the shrimp tinga.

    I usually make the chicken tinga with chicken thighs but we had some boneless, skinless chicken breasts in the freezer so I am using them.

    I suspect folks will want margaritas as the dinner beverage.

    Tonight Alan and I shared an afternoon smoking rack ribs. We had roasted yellow and zucchini squash along with vidalia onions for supper.

    It was a great visit, we enjoyed some ice cold longnecks and chilled wine and played with Dylan Kate.

    We are getting Square House pizza tonight per my niece's request. I am not going to argue with that.

    My wife and niece are in charge of dinner tonight making vegan stuff. Don't scoff as it is usually very tasty.

    My Omega thermocouple crapped out so even though I recalibrated my KJ dome thermometer I wanted something more accurate so I got a ThermoWorks Square DOT two probe unit on a good sale. One probe is for what you are cooking and the other is for the temperature just above the grate. I think I will smoke some chicken this weekend as a test run and also run a temperature check on my Blue Star oven. They are supposed to be accurate but good to have it checked out.

    Tonight I’m grilling bone-in country cut ribs seasoned with coarse black pepper and Everglades original seasoning.

    We will have freshly steamed yellow squash and onions with green beans & new potatoes.

    Ice cold longnecks and chilled wine will be our choice for refreshments.

    Tonight I am grilling thick pork loin rib-in chops on the KJ and testing out the new ThermoWorks Square Dot.

    Tomorrow I will smoke two chickens.

    Going to stir fry some green beans as a side.

    Tonight I’ll be grilling cheeseburgers. Our sides will be BBQ baked beans and coleslaw. Vine ripe tomatoes will be on the table.

    Ice cold longnecks and chilled wine are available as desired.

    I looked into it and it seems like you cannot do it. Maybe you need a mod to do it for you.

    Added in edit: I did post a query in the Help forum but I don't think that it will actually help.

    Maybe start a new persona as 74Nole? Except you would lose all of whatever it is that you have generated over the years. LOL.

    Liking the ThermoWorks Square DOT so far with a minor quibble. You can set a high temp alarm but not a low temp alarm. I would love to have both when smoking 8+ pound pork shoulders.

    All the years I cooked on the BGE I had their probe(s). One the wired probe itself that went to the meat and plugged into the unit that sat by the smoker—and one wireless that you paired and could move it around. Anyway, they both have Hi & Lo settings and they worked fine for me. If Kamado Joe doesn’t have one I see no reason the BGE probe that has both functions
    wouldn’t work for you.

    You could call it your Kamado Egg probe!
