    11 hours in on a slightly less than six pound pork shouldwe and still not there.

    After 11.5 hours it was really close and everyone was hungry. Shreaded it without a rest. Tasted great.

    Going to a friend's house for pizza on the grill and wine in the driveway.

    I have some Thai eggplants ready to harvest so thinking about a red Thai curry for tomorrow's dinner.

    Tonight we’re going to keep it simple and good. We are having chicken’n’rice with grilled cheese sandwiches.

    Beautiful day here today, but the typical humidity for this time of year.

    Ice cold longnecks and chilled wine are available on the back porch.

    Tonight I’ll be grilling bone-in country cut ribs indirect over cherry wood smoke seasoned with coarse black pepper and Everglades seasoning. Of course, Pat’s Homade on the last two turns. Baked potatoes will be on the top rack.

    Inside we’ve got a pot of fresh petite butter beans and BBQ bread.

    The back porch is open and ready for your leisure.

    Tonight will be potatoes fried in a bit of olive oil and then topped with sauteed cubanelle peppers, onion and Spanish chorizo. Dry vermouth to deglaze the skillet and add a depth of flavor. Some jalepeno peppers will spice it up.

    Tonight my wife is working late so I get to make something she doesn't like: red chard.

    Sauteed with shallots, thyme, dark cherries and butter and served with pan fried pork chops.

    I also love beets and she hates them. She says that they taste like dirt.

    Today was a work out in the yard day with mowing the yard and working in Ms. Jan’s flowerbeds. So we’ll have a light inside supper tonight.

    We are making our own version of the Cobb salad tonight with fried chicken fingers cut up into bite size pieces. We also like to include fresh cut up green bell pepper, cut up boiled eggs, Sargento Tex-Mex fine shredded cheese, vine ripe tomatoes, and broken up bacon pieces.

    The back porch is open and awaits your company. Adult libations are available.

    From time to time when I make a big pot of spaghetti sauce Ms. Jan will take half of it and make a pan of her lasagna and we’ll put it in the freezer until we are Italian hungry again.

    We sat lasagna out of the freezer into the refrigerator last night and onto kitchen counter this morning to have tonight. We’re going to have fresh petite butter beans rather than salad tonight along with Five Cheese Texas toast.

    The back porch is open and ready for your relaxation. Adult libations are available as desired.

    Last night we were supposed to have the check out walk with the group that rented a house from us through at 7 so we ordered take out from Gtro Plus to eat at 7:30. They contacted us late to cancel and rescheduled for 8 tonight.

    Wife wants me to to drive to Alachua to have wine at 5 with a client so I am making jambalaya early to reheat later before we do the walk through tonight. I have this feeling I won't be up there right at 5 as I am poaching chicken thighs now for one of the proteins. Andouilli sausage will be the other protein.

    Tonight we’re going with a lighter supper again. I’m grilling wings seasoned with coarse black pepper and Everglades Cactus Dust seasoning.

    Our side will be a freshly made Romaine salad topped with vine ripe tomatoes.

    The back porch is open and the refreshments are iced down and chilled.

    Since figs are in season we will have pork chops with figs, shallots and cream as well as sauteed spinach with pine nuts and lemon and wide egg noodles.

    Oven roasting a pork tenderloin with a teriyaki sesame marinade. Some will be for my son and some will be used in escarole soup.

    Also made a jerk marinade for jerk chicken thighs. I like to marinade that for three days.

    Making Bolognese sauce to put over orecchiette. Lots of ways to make this. I don't use veal (I double up on the ground beef) and I use bacon instead of prociutto. But I do use San Marzano tomatoes and very good olive oil as they are key ingredients and not a place to skimp.

    Tonight we’re going with a pot of white chicken chili covered with Sargento shredded Tex-Mex cheese and thin sliced fresh jalapeños.

    Tostitos Black Bean & Garlic tortilla chips are on the side. If y’all haven’t tried these you’re missing out. I highly recommend them.

    The longnecks are ice cold and the wine is chilled—the back porch is open.

    We’ve had a pretty good thunderstorm this afternoon but the back porch is open. The Yeti is restocked and Ms. Jan’s wine is chilled.

    Lovely.

    I am making cabbage, rice, ground chuck and tomato sauce. Kind of like cabbage rolls without the rolling. Kind of cleaning some things out. I threw some caraway seeds in there.
