    Sorry, I should have been more precise. Put prime rib in oven that already is 500 degrees. Let it cook at 500 deg for no more than 20 min. That seals the exterior of the prime rib, regardless of its weight.

    Then after the 20 min are up, turn off the oven. DO NOT open it again till done. When is done?

    Calculate 20 min per lb. I use 18 per lb.

    For example, you have a 5 lb prime rib. Put in for 20 min at 500 deg. After 20 min turn it off. Now 20 min per lb at 5 lb = 80 minutes More to go or 1 hour and 20 min with oven OFF. Do no open till that time is done. I prefer 18 min per lb. Can depend on your oven and your preference of meat interior as to red/dark pink, pink, etc. Dont go over 20 min per lb.

    MATH ERROR....DARN...I AM TIRED. 5 LB AT 20 MIN PER LB = 100 MIN OR 1 HOUR AND 40 MIN.

    I NEED A HIGH BALL :)

    I think you're right Lurk - the seals are probably not in as good a shape as they could be. It's sitting out on the driveway right now defrosting.

    Once some ice starts forming it doesn't help when it starts pushing the door outward.

    It's a Kenmore from Sears - no telling how old she is.

    Maybe I should just keep it until she no longer works.

    Tonight we are going to have Kayla, Tim, and Magnolia Grace as supper and overnight guests on their way to Pensacola.

    I’ll be grilling filet mignons with baked potatoes on the top rack. A good sear then grilled to medium rare does the trick here. A fresh Romaine salad topped with vine ripe tomatoes will be our other side.

    We have a beautiful day here today so perfect weather for afternoon/evening back porch time with ice cold longnecks and chilled wine. An after meal tumbler of Elijah Craig will be available.

    Ok. Now awake. Tonite is salmon on the grill. Simple: lemon and pepper. Better ideas?

    I was going to use leftover chicken piccata and leftover chicken tagine with a side of spaghetti with black olives. garlic, and flat leaf parsley and a salad for dinner, but my wife called and asked if cubanos from Mi Apa would be a good dinner.

    They make a Miami worthy version, so it was a no brainer.

    I was up for that after sitting around for three hours waiting for a rug cleaner to appear.

    For those keeping score, I decided to keep the current mini-fridge for now. After it thawed out (a solid block of ice in the freezer compartment fell out) it didn't look all that bad. It was a LOT lighter weight-wise also!

    I spent a little time working with the seal and think I may have improved it a bit so we'll see.

    Home ownership 101 marches on.......

    We are bouncing back to Fat John’s Pizza tonight to enjoy our Friday night game with. It’s been really good every time we’ve picked up there so far.

    Lazy morning around breakfast and coffee with Kayla, Tim, and Magnolia Grace before they got on the road to Pensacola.

    Back porch ice cold longnecks and chilled wine are set for Game 1.

    Tonight was spaghetti with flat leaf parsley, garlic, olive oil, and black olives along with left over chicken piccata.

    It was nice, but didn't help the Gators win. I even wore my grungy old "lucky" Gator cap and it still didn't work.

    Tomorrow before the game will be tacos with the usual toppings (cilantro, lettuce and onion) as well as a tomatillo based guac with some avocado and serrano peppers.

    Today is “Bounce Back Saturday” I’m hoping for our Gators! I’ll be grilling wings with a cold tray for our side.

    Our other sides will be ice cold longnecks and chilled wine!

    Time to make the tomatillo guac.

    Replaced the p-trap under my kitchen sink We were wondering what that smell was. The plywood floor is pretty wet, but not horrible. Lots of the leaking was caught in a large container holding various things. I will see how the plywood is when it dries.

    W/D has Boston Butts for .99 lb this weekend so this morning I put two on the BGE over applewood smoke @ 4:30 am. (One is for a family that we are close friends with).

    Our sides will be Ms. Jan’s homemade potato salad, fresh bi-color cob corn, BBQ baked beans w/pork, and deviled eggs. We will also have cornbread but I’m changing it up from jalapeño cornbread to mixing in Rotel tomatoes w/chilies (original) for a lil’something different.

    Ice cold longnecks and chilled wine will be on hand for Game 3 on the back porch.

    The neighbors are already standing out in their yards looking toward the BGE.....:)

    When my W/D has pork shoulders this cheap they are always Swift and in the 8 to 9+ pound range. I have done the before the crack of dawn smoke, but I kind of like the overnight smoke instead.

    Totally agree on apple wood for pulled pork. Cherry also works.
