    We always tell our friends and family we would love to have them visit, but if it's July 1-Sept 30 they are on their own

    After a 34* start it has warmed up some but a brisk wind has kept some bite in the air. Tonight it’ll drop substantially as the low in the morning is predicted to be 27*......

    That said, we are going to have a pot of white chicken chili tonight. We do add black beans and diced Rotel tomatoes to ours for a little added flavor.

    The back porch will afford us a perfect setting for enjoying the afternoon and evening (sunset included);) This goes hand in hand with both ice cold longnecks and chilled wine.

    Been up since 5:30 AM.

    Pork shoulder went on at 7 AM. Been spritzing with diluted apple juice every 30 to 40 minutes. Looks beautiful.

    Made baked beans.

    Made Carolina vinegar based slaw.

    Two loads of dishes washed in the dishwasher and a few more need to be cleaned

    I need a nap, but I still have to monitor the meat and watch the Gator men play basketball. Maybe the pork shoulder and I will "rest" at the same time.

    Almost 9.5 hours in on a 6.5 pound pork shoulder smoked at 250 F and it is only up to temps in the mid 150's?

    It might be a late dinner

    I have shrimp and chicken wings in the fridge for later tonight and tomorrow. Made more baked potatoes earlier for potato skins as I now have the other ingredients needed, except green onions.

    I have 3 large Coconut palms planted in my yard - each one about 15-20' in height w/3' of clear trunk. I've been formulating plans to protect their growing points (the heart) from a potential freeze. Right now I'm using C9 Christmas Lights and have a couple temperature monitors to help me with analysis. So far there's a 5 degree delta (50 outside and 55 inside the lights). We'll see what happens as the night wears on. My temperature device has recording capability for min-max so I'll know more in the morning. Our low is supposed to only be 37 tonight so this is more for those nights when the forecast is for a freeze.

    LOL......actually I have a bag of Russet potatoes I want to use up. Some are spouting and I hate when that happens!

    In the past, whenever I buy a bag of apples, onions, potatoes, etc....I start off by giving some away right off the bat. I live alone so it takes a while to consume that much of one thing.

    This time I didn't do that so I'm on a spud run! :emoji_potato:

    If you like to cook breakfast you can shred up as many as you want for making homemade hash browns, or cut them up for home fries. You can peel’em, cut them up thin for frying your own tater chips for lunches/snacks.

    Today I will be smoking a shank portion 10 lb ham over applewood smoke on the Egg. (Honey Baked Ham makes a multi-bean soup mix that we will take full advantage of at the proper time.)

    Our sides will be Ms. Jan’s homemade potato salad, fresh zipper peas, BBQ baked beans, and deviled eggs.

    Cooler weather today with sunshine and blue skies makes for great back porch time including ice cold longnecks and chilled wine.

    Thanks, Bill. Haven't done the fried chips but have the hash browns many times. I still kept too many this time - my mistake.

    Potato-overload.....lol.....

    BTW, the Christmas light thing worked pretty good last night. Our low here was 34F and inside the light blanket next to my palm heart it only got down to 48F. Not bad at all!

    As you might guess we are having leftovers from last night's meal. Good thing as I spent nearly all day cooking it.

    I want to save enough pulled pork to make my cracker version of tacos al pastor: pulled pork, pineapple, and datil peppers along with pickled red onions served Mexican style with two soft corn tortillas.

    And I want to find a source of mullet roe to make watermelon cubes topped with it. Fine dining Southern style. The only problem is that mullet roe and ripe watermelon are not available fresh at the same time, but mullet roe can be kept in the frig. Mullet roe is kind of hard to find. There is a market it for it in Japan.

    Friend of mine here does Smoked Mullet and dip as a hobby. His career has been with the city's utilities department. He posts on FB and has a huge following with his Mullet cuisine. I dated his sister back in the 80's. She drove an MGB and was a lot of fun.

    I had my shrimp for lunch and it was awesome! Had it cocktail style with a fresh jar of Heinz cocktail sauce. This was the Great Value (from WM) brand - "Colossal" size & cooked with tail on. I used to get the same thing from Aldi (they call theirs "Jumbo") but it became hard to get, so now I just but WM's.

    Wings are on tonight's menu while watching the game. GO Bucs! :)

    Got a call from my wife that is is bringing home a lot of pizza that was uneaten from lunch so just making a salad to go with it.

    Went to Publix and the local Asian market today to get fixin's for upcoming dinners.

    My wife wants me to make a big batch of the Thai-style egg noodles with peanuts, garlic, ginger, fish sauce, sesame oil, Thai basil, scallions, etc., to keep in the frig.

    I noticed that I have ancho/chili de arbol sauce that I made last time I made posole rojo, so that is on the menu soon. It needs two pounds of boneless pork shoulder/butt and I bought a 3.5 pound one. I am going to cut the other 1.5 pounds into steaks and cook like described in the June/July 2020 Bon Appetit. (I don't get the magazine, but my SIL does and she shared the issue with my MIL and I just happened to notice it in the paper recycling. It was called "The Grilling Issue" so I just had to check it out. Some really good ideas in that issue.)

    Still have a lot of shredded smoked chicken to use (enchiladas or chicken salad) and pulled pork (pulled pork tacos!).

    I have almost everything I need for mustard greens soup with pork and Sichuan peppercorns. Mustard greens are the one that is hard to get. Ward's has it sometimes. Maybe Hitchcock's in Alachua? Farmer's market? It isn't as good with collards, but is OK with turnip greens.

    The shank ham turned out really good last night. (The ham n’ cheese omelets weren’t bad this morning either;)) Looking forward to our other meals to come from it.

    Tonight we are going to be working on the left over white chicken chili.

    Beautiful day here today, started out at 35* and has topped out at 60*.
    Back porch ice cold longnecks and chilled wine are a must wrapped around the sunset.

    We also had a nice day in Gainesville. Mid 30's F for taking my dog for her customary early morning 3.5 mile walk and about 60 F when I took her for her two hour Monday walk when the cleaning ladies are at my house and my MIL's cottage.

    My dog is very territorial and if she is at home during the time when the cleaning ladies are here it is just bedlam. When a FedEx or UPS person delivers a package she goes crazy and shows more vertical leap than I ever had. Better to walk her to Depot Park, do a loop around the ponds, walk to Tom Petty Park (used to be Northeast Park), walk the perimeter, and then walk back home. Takes about two hours and is a nice walk.

    We will be continuing to work on and enjoy some of the leftovers that this weekend created.

    Tonight we will be having smoked ham, homemade potato salad, deviled eggs, and fresh zipper peas. Ms. Jan will also be baking some fresh yeast rolls.

    Another beautiful day here starting at 31* this morning and reaching a sunshine blue skies high of 68*.

    The back porch ice cold longnecks and chilled wine are definitely in play this afternoon and early evening.

    Picked up more shrimp from WM today! The Extra Large was on sale so elected to get that size instead of Colossal. It was almost half the price and still fairly large.

    Also got some green onions for my potato skins.....wohoo!

    I gotta say...those green onions made ALL the difference in the world....zing!

    Didn't hurt that we thumped Tennessee by 26 in basketball either. And that's with a couple starters out.

    Tempered by the news of course of Don Sutton's passing.... :(
