    I never got around to posting. We went with a new recipe for us for the chicken spaghetti casserole dish—it was more of a Mexican flare.
    More of a rainy day/cold weather meal I would say—

    Either way it went extremely well with ice cold longnecks—

    Made the spicy clam with coconut milk soup tonight after getting home from the baseball game. I needed some comfort food after watching the basketball game.

    Ahh, the house has been smelling sooo good from the pot of spaghetti sauce that has been simmering on the stove since this morning—

    Yesterday my wife wanted to try a slow cooker beef barbacoa. It was OK, but the spice blend was too salty.

    Tomorrow I will try to fake a true lamb barbacoa on my KJ. Barbacoa is a cooking style and not a specific dish, but the main thing is that it is a slow cooked and steamed meat cooked in a pit underground that is buried. Instead I will have a drip pan filled with water and veggies in my KJ to slow cook/smoke a boneless lamb leg roast until is is fall off the bone and can be shredded. It should be close to the real deal.

    It is taking a whole lot longer to get the lamb to 170 F than I thought it would in a 250 F KJ. No big deal.

    Making barbacoa tacos with the left over barbacoa from the other night. Made some pickled cabbage to go with it at my wife's request. Also made some caraway pickles.

    Since there is no game to go to tomorrow and no other sports to watch on TV I will smoke a 6 pound pork shoulder, make a batch of Carolina slaw, and give our new (about a month now) dog her typical 8 miles of walking. Long story about how we ended up with a two year old miniature Australian shepherd that I won't repeat and these dogs need a lot of exercise!. Not the kind of dog that I would have thought would be the next in line after Beau, who was an American Foxhound, who died a number of years ago. When Beau died everyone asked if we were getting another dog and I said maybe in the future. I am not going to be looking for one, but the right one will eventually appear. She will either keep me healthy or kill me. She is way too cute to murder.

    Tonight I’ll be grilling indirect over applewood smoke boneless country cut ribs with fresh bi-color corn and baked sweet potatoes on the top rack.
    Fresh Caesar salad to go with.

    Ice cold longnecks are greatly appreciated.

    Grilling some venison backstrap, getting drunk, and wandering around not knowing what to do with no sports on. This sucks! LOL

    Went to Cedar Key today just to do something different. Bought 1.5 pounds of sea scallops when out there.

    Tonight my wife is making her version of shrimp and grits. It is kind of an upscale Charleston-style version with Madeira and shiitake mushrooms. Really good.

    Making pasta bolognese today by my wife's request. I stopped eating pasta in late January and have lost 23 pounds. I figure that I can have some as a treat.

    My wife is making chicken enchiladas and I am making seared corn with chilies and Mexican herbs from the Rick Bayliss cookbook. I love that cookbook.
