Grilling chicken thighs LIGHTLY seasoned with Nashville Hot Chicken rub. Also grilling corn on the cob. Macaroni salad as a second side. Grilling the corn with the husk off to get some char on it. Also good to grill with the husk on if you soak it first so the husk doesn't catch fire.

Last night I made pork chops ala a recipe from Umbria in Italy. Very slowly pan fried with a pepperoncini and caper sauce with lemon slices. Spaghetti as a side along with caprese salad. Pretty good but I will need to tweak the cooking a tad from the Epicurious recipe. I thought correctly that the pork chops were getting over cooked before the sauce became a tasty syrup. Next time I sill saute rapini as a side instead of spaghetti. The bitterness would pair well with the richness of the pan sauce. Tonight is Thai red curry with chicken and lots of veggies. Glad that I have a kafir lime tree for leaves for flavoring.

We have friends on travel and we are watching their pool. I started their bottom cleaning "buggy" a few hours ago and soon we will go there to swim, eat take out, and drink wine.
A few times I have grilled pork shoulder steaks with a honey, mustard and horseradish sauce. The rub I use has coriander seed (freshly ground), dry mustard (Colemans), brown sugar, garlic powder, freshly grated horseradish and salt. It is tastier than you might think.
Last night I made charred cabbage with whole seed mustard, giardiniera and sweet Italian sausage. Wow was it tasty.
Tonight we’re having red beans and rice with Smithfield hickory smoked sausage. Fried cornbread will be on the side. The July col’beers and chilled wine are holding their own in the heat. Life is good in Gator Nation!
Last night was Thai take-out. Tonight it will be Italian Christmas. Making rigatoni with a choice of home made pesto with basil from a friend's garden or marinara with sweet Italian sausage as the sauces. One may have some of each.
Tonight we are having grilled hamburger steaks from a freshly ground boneless chuck roast and baked potatoes. Our sides will be fresh steamed broccoli and toasted garlic bread. We are enjoying ice cold longnecks and chilled wine this evening. Life is good in Gator Nation!
Do you grind your own or have your butcher do it? When I grind chuck I use a really old cast iron grinder that I first put in the freezer for a few hours.
Yours is the correct way to do it. I’ve gotten to know my meat cutters up here and when I see boneless chuck roasts on a sale price I pick one out, ring their service bell and get them to grind it for me.
Tonight I’m grilling boneless ribeyes on my older charcoal grill. Grilled asparagus will be our side along with fresh crescent rolls. The weather has been outstanding here today. 66* for a low this morning and a high today of 69*—and breezy to boot. Ice cold longnecks and chilled wine are the flavors of the day.
