Outside the dugout: What's cooking?

    Ribs are smoking. I have some corn on the cob to cook but not enough for everyone. I will make some rice with datil peppers to fill the gaps.

    And for the first time in my life I was stymied replacing a headlamp. My wife has a 2006 Ford Fusion and the passenger side headlamp burned out. I was able to access it through the wheel well but the wires did not allow me to get it clear. With much cursing and my wife's assistance I was able to extract the bulb going up, but there was no way on Earth that I could put a new bulb in. It seems like the wires are a few inches too short. It would have been a piece of cake if they were only two inches longer.

    Different situation than this?



    Reminds me of the appliance plug in cords. Especially the 220v one for my stove. If the stove is there by itself - no problem....just reach back and plug it in. But what about when they have counters on both sides? You practically have to position yourself upside down to be able to reach down and plug it in. o_O

    On my to-do list is to pull every appliance out and put them on casters as well as make sure the plug in cord is plenty long enough so there's more than enough length to move it around.

    Our stove is on casters (as is the small cabinet to its left). It makes cleaning and maintenance so convenient.

    Tonight my MIL is buying Thai food for dinner. Yummy.

    I have gotten proficient at cooking a number of Thai curries (having a kaffir lime tree for the leaves helps a lot) but then everyone gets the same dish instead of when we get take-out and everyone gets exactly what they want.

    I never got to posting for yesterday-we were at Alan’s for game day. He had homemade chili and all sorts of snack stuff for lunch and the games.

    For the supper meal Alan smoked rack ribs and chicken. We also had fresh Romaine salad topped with vine-ripe tomatoes with both baked potatoes and baked sweet potatoes on the stick burner as well.

    Ice cold longnecks, chilled wine and any whiskey drink desired was available.

    Life is good in Gator Nation!

    Tonight we’re going with leftover smothered fried steak and gravy, mashed potatoes with butter beans and corn. Of course-fried cornbread.

    And I am really switching up what I normally order. I am ordering a seafood fried rice dish just hot instead of Thai hot. I have never gotten this before and I am thinking that Thai hot might overpower the seafood flavors.

    But if it is very "fishy" I will go Thai hot next time.

    Our neighbor, who eats with us almost every night, wanted to cook supper for us tonight and is making her spaghetti since we just got back home. We shall see…..

    The beer will be ice cold and the wine chilled.

    And that’s all I have to say about that…..;)

    Actually she used ground sausage and the little mini-sausages like people put in the crock pot with grape jelly and served her spaghetti over fettuccine…

    Another great Gunsmoke episode - with Stuart Margolin ("Angel" from "The Rockford Files") as one of the bad hombre guest stars.

    I worked in the yard today and also on an Echo stick edger trying to troubleshoot a performance issue. Something is still not right so I will do a little more this afternoon after a provision run for Mom.

    She's had two power outages in the past few days and when that happens the microwave needs the clock/time/date reset before it will operate again. This is way beyond Mom's capabilities so I go over and do it. Today I'm going to take the model # with me and research how to get around this.

    Tonight I’ll be grilling chicken halves seasoned with coarse black pepper and Everglades seasoning-yep, Pat’s Homade on the last two turns.

    Inside we will have fresh zipper peas w/cow horn peppers, scalloped potatoes, and spiced apples.

    The back porch is open for your leisure with ice cold longnecks and chilled wine on hand.

    Another head's up.

    Dollar General Store's house brand (Clover Valley) milk.....the 2%. I just finished the last of a gallon with the 'use by' date of 9-29......and it was perfect to the last drop.

    Now I'm not saying this means other brands wouldn't be as good. But from this point forward, I'm getting my milk from the old Dollar General....based only on this small sample.

    As an aside....I normally try to consume things before their "use by" date but for a single guy a gallon of milk can go a ways. Even if Winkipop helps! As she usually does....

    Tonight I’ll be grilling hamburger steaks from a freshly ground boneless chuck roast.

    Inside we will have a pot of fresh green beans and new potatoes and bi-color cob corn.

    Plenty of sunshine but we’re also continuing to have a persistent dose of mosquitoes from late afternoon 5:00ish into early evening.

    The longnecks continue to be ice cold and the wine chilled on the back porch.

    Life is good in Gator Nation!
