Tonight was just some local take-out before heading off to the Mac. It is baseball so you never know what is going to happen. That is what makes the game so wonderful and so frustrating. Leaving for the game in about 10 minutes.
6 slabs of ribs on the smoker, roasting pan full of baked beans sweetened with brown sugar and cane syrup with a pound of bacon on top(along with some other tasty ingredients), cole slaw, broccoli casserole, Hawaiian sweet rolls......new bottle of Crown XO.
Didn't cook today and didn't go to the game. Getting things ready for a long road trip. Replaced and old battery in an old GM minivan. Who knew that you had to remove structural members to replace a battery? No big deal, though. Got it done. And didn't go to the game, but got to listen to much of it and watch parts on ESPN3.
We are going with the basics tonight. Grilling hamburgers with smoked provolone cheese and grilled vidalia onions on top along with fresh fries seasoned with Old Bay's.
Smoking three butts over apple wood today to go along with fresh field peas w/snaps and homemade mac & cheese. Ice cold long necks required.
Just one for us, always get requests from a couple of friends when they find out I'm smoking us a butt.
Finally getting to do some cooking after a long road trip and a weekend and a Monday of Gator home games. Cooking Parmesan crusted chicken breasts that marinade in lemon juice first. They are already pounded and soaking. Egg, panko, and cheese toppings before being pan fried. Mixed greens salad with avocado (most of them were too soft at Publix, but I found a perfect one) and a really nice tomato. The side dish is an experiment: sauteed radishes and watercress. It has lots of butter and olive oil so it can't be too bad.
We just back from Ga--went to see my Mama (93 years young) and take her two sour-cream pound cakes that Jan bakes for her--so it's a pre-planned pot of home-made chicken'n'rice for us tonight.
My last weekend in London as we are moving back home next week. This morning is the Primrose Hill market. Banh mi Vietnamese sandwich, Tunisian olives in garlic and cilantro, and a Kenyan salad with grilled salmon on top. The Kenyan salad has chickpeas, kale, lentils, sweet potatoe rings and a spicy sauce on top. Plus of course the neighborhood church has a Belgian style brewery in the basement so some beer with it! For dinner, a green salad. Nothing exciting. Then for the baseball game (the first 4-5 innings anyway) is chechil again with a Polish beer Lech.
