New Orleans
Going for the first time this weekend for 4 days, with some other guys in their late 20's for a bachelor party. Any must suggestions?

Bourbon Street is fun. However, there is a street that cuts off of the eastern side of the French Quarter called Frenchmen Street. It intersects with Esplanade not far from the river. There are a lot of clubs on Frenchmen where the locals go to hear music. Some good food too.

Do not go to New Orleans w/o visiting Preservation Hall $10 for a set of live, authentic trad jazz. You're only in there for about 40 min and won't regret it. Go right next door to Pat O'Briens for a hurricane or three. Def do Pat O's at night.
Others can give you good suggestions for food and local music hangs. Have fun and be SAFE! New O has always been a dangerous town. Don't wander alone.

Down the street from Cafe du Monde is Central Grocery. That is where you get a muffuletta, NOWHERE ELSE.
Also, go to The Gumbo Shop and order a bunch of appetizers. Forget the entrees.
Last, don't forget a late night, drunken LUCKY DOG!!!

If you don't want to fight the crowd at Cafe Du Monde, there is another place called Cafe Beignet on Royal Street where you can sit in a quiet garden setting and enjoy your beignets and cafe' au lait.

I was just kidding about Bourbon Street...
Here is what I sent to my friend who was going.
Bourbon Street is obviously the place to go. Just walk up and down it the first time and you will find a place that you like. Lots of them have live bands. Most of them were free to get in. Go to Tropical Isle to get a Hand Grenade. be careful because they are STRONG and will annihilate you!
I recommend going to Frenchman Street one of the nights. You will have to take a cab out there, but its worth it. Its more chill. dBA http://dbabars.com/dbano/ and Snug Harbor http://www.snugjazz.com/site/ are cool places to hang out there. Praline Connection http://www.pralineconnection.com/ is a really good place to eat on Frenchman.
Do not miss going to Cafe Du Monde http://www.cafedumonde.com/ Its the most famous place in New Orleans. The beignets are ridiculous. It's right at Jackson Square which has street performers. Pretty cool scene.

Do one of the tours, even a carriage if your with wife or date, so you can orient nad know a little about the place. Its near the muffelata place mentioned above, at jackson square there. I enjoy taking the stern wheel steamer tour too. If you like oysters, there is a great one just outside the oyster bar is Great! Dang,,,,,I cannot remember the name but its like a standard. Its just off the main drag of New Orleans one block into the zone. The other suggestions above are awesome. Have fun, and have a friend you can call if ya need bail.

Havent been there post Katrina, but a trolley/streetcar ride down St Charles ast Tulane University used to be a winner.

Was just there in Feb. Had a great time in the Quarter, but I don't remember the name of a single place I went. Met up with an old friend from my home town who lives in the Quarter. Just followed her around all night. Used to visit the Quarter in my youth. It's so much cleaner and nicer now.
Best place I went the whole week was the Avenue Pub in the Garden District. It's one of the coolest craft beer/craft whiskey joints I've ever visited. Ended up going there almost every night. The food was very good as well. The crowd was mostly really cool locals.
Hopefully Ice will weigh in. Avenue Pub was his suggestion. He's been living there for a few years. We were actually supposed to meet while I was there, but he had something come up. He gave me a lot of advice before my trip.

Ice is the man with the recommendations. I recommend Mandina's over Mothers. Locals, no line and better food in my opinion.
I also highly recommend DBA and you may want check on who might be playing at Tipitina's, as well.
I subscribe to avoiding Bourbon St but that's just me.
I realize this is a bachelor party but I am a huge fan of the WWII Museum.
Cochon for one meal.
Don't go to Emeril's. it sucks completely
The bar in The Roosevelt Hotel is a great spot for a nice cocktail or 10. Beautiful bar and great bartenders.

There's another one on Frenchmen Street that can be interesting. I think it is called the Spotted Cat. They had a good jazz band the night I was there.

There are a lot of incredible restaurants and fun things to do in and around New Orleans, but for the Bachelor Party itself (whether it's 2 hours or all 4 days  ), I say DO go to Bourbon Street!! (but watch out for each other)
One suggestion, however: there's a restaurant/bar called Oceana's about a half block off Bourbon St (toward the river), 3 or 4 blocks from Canal, that I used to go to for oysters a little cheaper than the rest (except for one place on Bourbon that was even cheaper, but the oysters were often the size of a dime). They have some other decent (not great - although a friend was raving about their duck, which I never had) entrees also. And, a huge serving of creme brulee for dessert
