Default hot wing style omelet

I grill my hot wings. I simply coat them with Rickey's hot sauce(other hot sauces work well too) and toss them on the grilled til they are brown and crispy and smoked.

on occasions I have some leftover wings

so I made an omelet with the leftovers

ingredients
--removed meat from grilled hot wings
--eggs
--blue cheese
--cooked and crumbled bacon
--diced celery then briefly sauteed(partially cooked so there is a little bit of crunch left)
--Cajun seasoning or wing sauce

-scramble the eggs and pour onto low-medium heated omelet pan/skillet
-allow the eggs to cook briefly then put blue cheese, chicken meat, celery on top of egg in a thin layer and cook until cheese melted.
-fold the omelet and pace on plate and top with either Cajun seasoning or wing sauce

serve with hash browns(preferably done with onions and green bell pepper)

I find grilled wing meat works best due to the grilled flavor
