2 months, countless hours online, at least a dozen trips to various gun stores and I FINALLY got the very modest amount of 9mm ammo I set out to get....a task that should have taken me approximately 10 minutes. Total.
I love Wal-Mart. 3 boxes of 100 rounds of Winchester 9mm FMJ for about $26/box.
Nice sig. Here is a great video I just saw on 3D printed guns. Incredible! Yes....you can print out lower receivers and mags (all except for the springs which you can easily get). All the parts you can't just print out, you can easily buy.....this pretty much renders gun control/registration impossible.
My new .45, SIG Scorpion Carry. Going back to 1911 carry for awhile.
Try to avoid a 5" barrel if you can for CC, especially for OWB paddle holsters, not unless you're going IWB (I have an IWB holster that will accommodate both my .45 and Beretta Px4 Storm). I'd like to have a .45 acp with a 3.5" or 4" barrel, and am looking at some of the Springfield XD compact models and a Rock River Arms 3.5" barreled .45. Ruger also has a new SR45 out that I'd like to take a look at too.
Any gun owner should have a .45 acp in their collection and be well-fielded in using it too. Awesome firepower, smooth platform, good for women to use (not much kick at all even from a full-sized .45), and many, many different models to choose from.
Just a heads up on .45's though. They use big ammunition and can be a little fussy sometimes if you don't keep the feed ramps and barrel bores polished. Whenever you get a new or used .45 (or any semi-auto for that matter), break it down first and polish the feed ramp well and clean the weapon and you should get lots of enjoyment out of it.

Speaking of 1911's....I am leaning heavily toward a Remington R1 though the Rock Island tactical has made me think as well. Both get good reviews very consistently as I read up on them. I'm not looking for a safe queen like a Kimber and I read to many negative reviews of the Paras to consider them anymore.

IMO, KImbers are not a practical CCW. They are tightly built platforms and will jam with the slightest bit of grit in them. Many Kimbers are fine competition pistols, but I just wouldn't have one as a CCW.
Rock River Arms uses Colt molds much like Taurus and Rossi use S&W machine molds, so they're a quality-built weapon.
I bought my refurbished Regent for just under $400, and usual retail is about $600. There are plenty of quality 1911's for under $800 out there. A lot of them add a lot bigger price on them when you add the names Colt, S&W, and a few others.
The difference is customization on the platform. Any quality 1911 for about $500 - $700 is usually a no-frills basic version and then you're paying more and more money for more bells and whistles.
I know the Remington R1 you're talking about and as far as I'm concerned, you can't go wrong with that either.

Yep i have been thinking about an R1 too. Just picked up an AR for a really good deal. Now I'm ordering stuff to modify it.

Magpul AFG (stay away from vertical grips and start shooting with the thumb of your offside hand forward and aligned with the bore)

Magpul MBUS front and rear BUIS
Aimpoint T1, Aimpoint Pro, or Eotech EXPS (I run the EXPS3-4 and a magnifier)
Magpul MOE or CTR stock
Ergo grip
HSP Inforce WML w/ thorntail offset mount
Geissele SSA or SD-C trigger
Geissele Modular rail or Spike's SAR or BAR (definitely go free floated so that accessories don't shift POI). I prefer at least 12" on the rail and a Geissele or Spikes micro gas block. Alternatively if you have. fSB you can take a Dremel to it
Surefire SOCOM brake if you think you might want to go suppressed in the future, otherwise BCMGUNFIGHTER comp is good too

I keep a couple of cheap holsters for emergency use, but like to go with Fobus paddle holsters. Great hold even with a dress belt because they grip the pants too. I like the one I have for my Beretta Px4 Storm too. I'll occasionally use a belt slide holster from Blackhawk! because they're ambidextrious and can be IWB or OWB.
One thing about 5" barrels on 1911's though is that you get the best accuracy and least amount of kick, which is minimum at best.
Always thought that when it comes to semi-auto pistols, the 1911 .45 acp was the 12 gauge shotgun of home defense SA pistols.
Overall, I always have my .45 and my Ruger ,357 Magnum revolver with 6" barrel loaded for quick home defense. Both are nearly equal in pure striking power, with the .357 coming out on top.

I carry a Springfield XDs in .45. If you don't mind only having the 5+1 capacity and can find one at a reasonable price (a challenge right now, although GrabAGun.com has them pretty regularly at 534 for the black one and SportsmansOutdoorSuperstore.com occasionally has the black at like 510, both of which are good) they are a phenomenal gun. If looking at the bigger double stack ones, I like the XD-M line more than standard XD. Whichever way, however, I can't recommend them highly enough. The only downside would be if being made in Croatia is a dealbreaker for you.

Check out Raven Concealment. You can run their holsters IWB or OWB and they have a TON of attachment options. If you're going OWB, they can't be beat. The only downside is the cost (about $100) a 16-18 week lead time. I have one of their Phantom holsters on order for my P229.
The G-Code/HSP Incog holsters are supposed to be great for IWB, especially if you want to do AIWB, but they only make those for a limited number of guns right now. If you want to carry IWB and they make one for your gun, I would say for with one of those.
Panther Concealment also makes a good Kydex OWB but they aren't as customizeable as Raven. They're in Florida and have about a 6 week lead time. I have one for my P239 and it holds it really tight to my body and is still pretty much invisible under a t-shirt at 3 or 4 o'clock with a 15 degree cant.

I haven't taken the class yet so I don't concealed carry but....my Keltec P11 fits very conveniently in a jacket pocket. You could get by without a holster with it. If you wear a shirt untucked, you could just stuff it into your pants pocket and nobody would know you had it...and at either 10 or 12 shots depending on the mag and 9mm instead of a pea shooter, its great for that purpose. That's a lot of firepower in a small package. Its reasonably accurate too. The only downsides are that the trigger has a long pull and you really have to make sure you don't limpwrist it or you can get FTFs....that's unavoidable with a lightweight compact though. A hammerless revolver would be more reliable but you'd also only get about half the shots.

I like the P-11, had one of the first ones that came out, it has a long pull due to the low mass-high velocity hammer that it utilizes, it's still a pretty light pull for a DAO. You be the judge, but I've always been leery of using a pocket pistol without a holster. Besides protecting the trigger, a pocket holster will also break up the pattern of your pistol so it doesn't print, and also help maintain the position of the pistol in your pocket so it's in the the same place each time you reach for it.
