What's your favorite simple recipe?
Not one you got from a book, not one grandma handed down, not one you picked up on the internet but something you just one day threw together in the kitchen for a quick meal that was so good and so simple you make it all the time now?
One evening I had a hankering for a hot open faced roast beef sandwitch. I had a pound of Boarshead roast beef in the refrigerator and found a package of Pioneer brown gravey in the pantry. I mixed up the gravey with a couple of cups of boiling water, added the beef then spooned it over 4 slices of white bread. Plain, simple, fast and ummm so good.

Side dish:
Cut carrots in half both ways (so you get 4 pieces per carrot).
Drizzle with olive oil, salt, and pepper and stick in the oven at 450 until they are soft and start to char some.
Put them in a bowl and throw some honey on them and toss.
Honey roasted carrots.

Since peanut butter and jelly is taken I'll say: Peanut Butter Chicken.

For utter simplicity, I go with a grilled cheese sandwich. You also need kosher dill pickles and Cheez-its.

Put Bacon in microwave on many paper towels and cook until very crispy.
Slice up Avocado and tomato. If you don't like your avocado sliced, you can smash it up with low fat mayo and make an avocado mayo or if you want to make an avocado aioli, you can blend in a blender with salt and olive oil-but that's more complicated).
Toast bread
Put it together- Toast- Avocado- bacon- tomato- toast
The best BAT (as opposed to BLT) sandwich ever.
A twist on this is use less bacon and add a cooked chicken breast or deli sliced turkey that has been heated on a skillet, and you have an avocado club sandwich (but if I do this I also add a little peppercorn ranch dressing on one of the pieces of toast).

Sirloin stew.
Sear cut up sirloin, drain. Clean out the fridge/pantry of any and all veggies or can goods, put in pot and bring to boil. Put on simmer and add back the sirloin. Season to taste.
Rice or potato, to thicken.

Since becoming single I broil fish almost nightly. I've (mixed in with the gym) lost 70lbs since July. It's simple, quick and healthy.
