I have a bunch of Apps that I'd like to place in folders.

What is the easiest way to do so?

Plug it into your computer and do in iTunes.

Probably easier just to do it on the device. Basically you tap and hold on one of the apps, which starts them shaking. You then drag it onto another app that you want in the same folder, and let go. Then you can name the folder, and use the same "tap and hold" technique to add more to the folder.

This video is a little dated (iOS 4.2) but it shows the method.

The biggest factor may be how many Apps do you have? I find that if I do it the first time in iTunes and sync, it's easier for me. It's easier to see ALL the screens in iTunes then switching from screen to screen on the iPad. Either way isn't very hard. YMMV.
